Thankful Post 194

Today I woke up and took a look at my two dairy ferments. I think I am going to give up on Ms. Sutherland; mostly because it smells bad and maybe a little higher maintenance than I thought, oh and I may have killed the grains.

Yesterday evening I started a new love nest for Gertie but I was really concerned that I had left it too late as Gertie was a little runny, I worry about that each time I make Gertie a new love nest and every morning after I am happy to see I am wrong.

I am really thinking that I should experiment with fermentation times and start a little batch of yogurt this morning to stop fermenting tomorrow. Today I am thankful that I get to explore different fermentations.

In my head I am thinking maybe I will do that tomorrow. I am waiting on Gertie to stop fermenting in the fridge right now, and don’t want to use it to start a new one until after it is done. As I write this I am thinking maybe I will start a little batch of yogurt this evening and let it ferment over the weekend? I have seen people saying they have fermented for 48 hours for a really sharp yogurt.
