I am thankful for this COVID thing, I think this was a thankful post previously but please hear me out. I love cooking but I know what I like, or at least that’s what I thought. I went vegan for the main purpose of saving money, but it also got me to experimenting with new foods.
For a while now I have been working at consuming less unnatural preservatives so making my own things is something I already try to do. I am getting to learn new things with different food perpetration techniques and it is enjoyable. I know I wouldn’t have gotten into vinegar making had I not been given the opportunity to live through this issue, I take that back I have tried in the past but I didn’t know what I was doing and didn’t care to figure out why it wasn’t working. I had in the past tried getting into making extracts, and they did turn out good but I now have a far greater appreciation at what I can do to make extracts. I don’t think I would have gotten into lacto-fermentation had I not been given the opportunity to search out new things to cook; I have done sauerkraut, a couple of times. I have made numerous soy sauce infusions with mushrooms, it’s great for a stir fry. I have started making my own hot sauce, lacto-fermented peppers so yummy!
I have a few more things I planned on/doing prep work for already. I am so excited for all my future cooking adventures, most if not all of which I think I can continue on when this COVID thing is over.
