So I have mastered the process of making sauerkraut, but I don’t eat enough of it to make it worth while to make it that frequently I also do not have the back to stand and beat it for 30 minutes. I have tried sitting at a table and beating but that is worse on my back. A little while ago I ordered a head of lettuce, for something? It has been sitting in my fridge for a few days waiting for me to do something with it, I was thinking I could make a dressing and eat it like that but I could not find the motivation to make the required mayonnaise as the dressing base. I thought about it last night and decided I was going to jump back into the fermentation game but my back wasn’t going to let me stand there to beat the lettuce so “I will do it tomorrow.” Or the immortal words of procrastination!
Today came along and I thought maybe I could use the dough hook on my stand mixer? Around noon I decided to kick the procrastination in the bum bum and use my dough hook to beat the lettuce. Sure the stand mixer did not like it for the first little bit but once all the lettuce was softened a bit it was all good.
Today I am thankful that I was able to use my dough hook to get back into the fermentation game.
