So I started Bugsie today, Bugsie is the name I have given my fermenting carrot brine. My new thing is fermenting carrots, however while my carrots where being prepared I thought “well isn’t this pickling carrots?” I have never been good at pickling things, but lacto fermentation is my jam. I was fine with the direction my life was going until I sat down and had a minute to think about my next project, I decided cucumbers and the brine would be named Dill. Knowing I have failed at making pickles the many times I have tried in the past I got curious as to the difference between lacto fermentation and pickling, turns out it is salt vs acid (at the simplest level).
