Vinegar

I make my own vinegar. I recently saw an article about how letting your vinegar develop to long is not a good idea, so I went and checked my vinegars today most of them where not good. I searched out things and found some things as to why only a few of them developed some kind of mother. I have now started a few other vinegars, hopefully the five vinegars I started today will develop a mother and will be good near the beginning of December if not I have some mother to help it along before Christmas.
