In the past I have tried dehydrating things in salt just cause I would like to try to add different flavours to things. In the past I wanted to try this but I couldn’t get a yolk to stay together. Today I got a yolk to stay together and put it into salt, it appears that it will be a two week process! I was reading up on it, and I guess it is the same lactobacillus creature that ferments many of my things in my fermentation station so that’s cool I am fermenting an egg yolk!
