Today I decided to sous vide something new. I thought about what I had in my freezer, blue berries I have blue berries in my freezer. What could I do with blue berries?
After looking things up I think I am making jam, I will see what it is in about an hour?
I don’t have any lemons or limes so that acid was out of the question. I thought about it and realized “hey, I could use some white wine vinegar.” So I put some of the vinegar into a jar followed by blue berries and sugar, and then into the sous vide at 60 degrees Celsius for an hour.
