After my adventures of being a vegan finished I got back into sous vide. The bags that I had were well past their ability to hold a vacuum so I needed new bags, as I never liked the manual pump I decided to get a different setup. I really dislike how the bags are single use but that’s life I guess.
With this new bagging setup I can put different things into the bag with the protein. The previous setup I was fairly limited to the protein and spices, softer things like butter did not work. Today with my new setup I have a peek loin chop with butter and a few of my pickled garlics, I have seen many recipes with butter but was never able to try them but now I can!
Edit: Wow was that pork chop ever good.
