Sauerkraut third batch

I had made some sauerkraut a while back and I really liked it so I thought I would make some more. The second batch I sort of left out on my counter a little long, and it kinda sorta went moldy. I scrubbed the jar down and put half of a green head of cabbage and half a red head of cabbage, 4 or 5 cloves of garlic and some ginger through my food processor. I am not to sure how much of the ginger got in there as I had grabbed what I thought was some cabbage and eat it, yeah it wasn’t cabbage!

My plan is to let it do its thing on my counter for a day or two and then move it to my fridge.

As I have gone vegan I have less things to put it on, but maybe it could be a pasta sauce?
