Today I started making sauerkraut; I shredded up some cabbage, put in some white onion, some “fresh” ginger I found in my fridge, some dehydrated garlic flakes, kosher salt, I was going to put some weights on it to start the whole growing process when I realized how white it was. Having never made sauerkraut before I didn’t want to go to far with a pepper but I have red onions, so I shredded up one of those and stuck it in there.
I need to remember to burp it everyday but hopefully in a week I will have sauerkraut.
